Cake:
- 1 ¼ cups whole wheat flour or gluten-free alternative
- ¼ cup unsweetened cocoa powder
- 1 ¼ cups dates pitted and soaked
- ½ cup mashed sweet potatoes
- ½ cup unsweetened applesauce
- ½ cup plant-based milk almond, oat, or soy
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- ½ tsp salt
Dairy-Free Chocolate Frosting:
- ½ cup dairy-free butter
- ¼ cup unsweetened cocoa powder
- 1 cup powdered sugar or coconut sugar blended into powder
- 2-3 tbsp unsweetened almond milk
For the Cake:
Preheat oven to 350°F (175°C). Line an 8-inch round cake pan with parchment paper.
Blend dates into a smooth paste with a bit of warm water.
Mix dry ingredients in a bowl: whole wheat flour, cocoa powder, baking soda, and salt.
Combine wet ingredients in another bowl: date paste, mashed sweet potatoes, applesauce, plant-based milk, apple cider vinegar, and vanilla extract.
Gradually mix dry ingredients into wet ingredients until smooth.
Pour batter into the prepared pan and spread evenly.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely on a wire rack before frosting.
For the Frosting:
Cream dairy-free butter until smooth.
Mix in cocoa powder and half of the powdered sugar.
Add almond milk gradually while mixing.
Whip until fluffy, adjusting thickness with more milk or sugar if needed.
Frost the cake and enjoy!
