Ingredients
  

Cake:

  • 1 ¼ cups whole wheat flour or gluten-free alternative
  • ¼ cup unsweetened cocoa powder
  • 1 ¼ cups dates pitted and soaked
  • ½ cup mashed sweet potatoes
  • ½ cup unsweetened applesauce
  • ½ cup plant-based milk almond, oat, or soy
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • ½ tsp salt

Dairy-Free Chocolate Frosting:

  • ½ cup dairy-free butter
  • ¼ cup unsweetened cocoa powder
  • 1 cup powdered sugar or coconut sugar blended into powder
  • 2-3 tbsp unsweetened almond milk

Instructions
 

For the Cake:

  • Preheat oven to 350°F (175°C). Line an 8-inch round cake pan with parchment paper.
  • Blend dates into a smooth paste with a bit of warm water.
  • Mix dry ingredients in a bowl: whole wheat flour, cocoa powder, baking soda, and salt.
  • Combine wet ingredients in another bowl: date paste, mashed sweet potatoes, applesauce, plant-based milk, apple cider vinegar, and vanilla extract.
  • Gradually mix dry ingredients into wet ingredients until smooth.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool completely on a wire rack before frosting.

For the Frosting:

  • Cream dairy-free butter until smooth.
  • Mix in cocoa powder and half of the powdered sugar.
  • Add almond milk gradually while mixing.
  • Whip until fluffy, adjusting thickness with more milk or sugar if needed.
  • Frost the cake and enjoy!
