For the Cupcake Base:
- 3 cups all-purpose flour
- 1 ¾ cups granulated sugar
- 1 ½ cups whole milk
- ½ cup vegetable oil or melted butter
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon baking powder
- ½ teaspoon salt
For the Frosting:
- 1 ½ cups unsalted butter
- 4 ½ to 5 cups powdered sugar
- 3-4 tablespoons milk
- 2 teaspoons vanilla extract
- Pink or blue food coloring
For the Filling:
- Pink or blue food coloring for the surprise reveal inside the cupcakes
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Prepare the Cupcake Batter:
In a large bowl, whisk together the dry ingredients (flour, sugar, baking powder, salt).
In a separate bowl, mix the wet ingredients (milk, oil or melted butter, eggs, vanilla extract).
Gradually combine the wet ingredients with the dry ingredients and stir until smooth.
Prepare the Frosting:
Beat the softened butter in a bowl until creamy.
Gradually add powdered sugar, milk, and vanilla extract. Mix until smooth and fluffy.
Divide frosting into two bowls. Color one portion with pink or blue food coloring.
